I love easy recipes that are pretty to look at, fast and easy to make and taste really good.
This healthy salad fits the bill in all 3 areas.
INGREDIENTS
4 Tablespoon balsamic vinegar
1 teaspoon fine sea salt
1 cup extra-virgin olive oil
12 Tablespoons pine nuts
1 pint of small tomatoes cut in half (prettier if tomatoes are different colors)
1/2 pound fresh figs, cut into quarters
1/3 pound small, seedless red grapes, halved
4 ounces crumbled blue or Roquefort cheese
3 teaspoon fresh chopped basil leaves
1-2 teaspoon chopped parsley leaves
Black pepper
In a small bowl, whisk together vinegar and salt. Whisk in oil.
In a small skillet over medium-low heat, toast pine nuts, shaking the pan occasionally, until light golden, about 2 minutes.
Spread tomato slices on a large plate.
Scatter fig quarters, grapes, and pine nuts over tomatoes.
Sprinkle with cheese and basil, drizzle with dressing and finish with pepper.
